Cookie-Coated Chicken Breast

Introducing our new favorite sweet and savory gourmet recipe: cookie-coated chicken breast!

Recently, our talented team in the test kitchen tried their hand at making a brand new recipe: crusted salmon with sunflower seed cookies. This time, they whipped up a similarly satisfying dish for you to indulge on: cookie-coated chicken breast!

Traditionally, cookie-coated chicken breast doesn’t end up on your dinner plate. Yet while cookies as a breading for chicken seems unusual, it’s a naturally delicious new option! Tag @GracesBestCookies on Facebook and share your recipe results with us!

The Ingredients

Before you get started, let’s make sure you’re prepped with the proper ingredients!

cookie-coated chicken breast ingredients

For the chicken:

For the honey mustard:

  • 1/4 cup honey
  • 1/4 cup Dijon mustard
  • 1 tbsp distilled white vinegar
  • 1/4 cup mayo
  • 1 tsp cayenne pepper

The Steps

  1. To start, preheat oven to 200C/390F
  2. Second, spread ground cookies on a baking tray, spray with oil (spray vertically to avoid blowing off the tray), then bake for 3 to 5 minutes until light golden. Transfer to your bowl.
  3. Third, place a rack on a baking tray (not required but this helps bake it more evenly).
  4. Then, put the egg, mayo, Dijon, flour, salt and pepper in a bowl and whisk with a fork until combined.
  5. Add the chicken into the Batter and toss to coat.
  6. Next, pick up chicken with tongs and place it into the cookie bowl.
  7. Sprinkle surface with cookie crumbs, then press down to adhere. Transfer onto baking tray. Repeat with remaining chicken.
  8. After that, spray lightly with oil, sprinkle with a touch of salt (optional). Bake 18 minutes or up to 20 minutes if gigantic. Any longer will dry out chicken.
  9. Finally, while chicken is baking, combine honey mustard ingredients and whisk until blended.
  10. Remove chicken from oven and serve immediately, with honey mustard and sprinkle with fresh parsley, if desired.

3 Reasons to Eat Sunflower Seed Cookies

Our sunflower seed cookies not only make a delightful treat but complement your cravings with naturally delicious ingredients.

When compared to a classic sandwich-style cookie, (you know, the kind where a generous amount of crème is stuffed between two chocolate cookies) sunflower seed cookies like ours at Grace’s Best do not conform to a pattern of tradition. And that’s the thing we love most about our cookies: there’s nothing traditional about them!

But why bother choosing Grace’s Best sunflower seed cookies over that of a leading brand?

1. We’re family-owned and based locally in Kansas City, MO.

In 1992, Grace’s grandmother, Margaret, forged a new path and began selling the cookies that her loved ones in the Kansas City area simply couldn’t get enough of. With an idea all her own and the support of her family, she started a lasting tradition using a non-traditional recipe. Since then, her son has taken over the company to honor his mother’s legacy and bring her sunflower seed cookies recipe to taste buds that crave a different kind of snack.

Plus, we love the local scene and supporting the small grocers that carry our cookies!

2. Grace’s Best Cookies are made with naturally delicious ingredients.

Artificial preservatives and artificial flavors make no sense in our cookies! We only include pronounceable and recognizable ingredients so that what you see on the label is what you taste. Take a peek at the ingredients we use in our sunflower seed cookies – ones you can find right in your own kitchen:

  • Rolled oats
  • Sunflower seeds
  • Sweet cream butter (milk)
  • Brown sugar
  • Enriched unbleached flour
  • Sugar
  • Eggs
  • Baking soda
  • Vanilla extract

Grace's Best natural gourmet sunflower seed cookies 1 oz

On the other hand, the ingredients for a basic sandwich cookie tell a completely different story! What are you familiar with on this list?

  • Unbleached Enriched Flour (Wheat Flour
  • Niacin
  • Reduced Iron
  • Thiamine Mononitrate {Vitamin B1}
  • Riboflavin {Vitamin B2}, Folic Acid)
  • Sugar
  • Palm And/Or Canola Oil
  • Cocoa (Processed with Alkali)
  • High Fructose Corn Syrup
  • Leavening (Baking Soda And/Or Calcium Phosphate)
  • Salt
  • Soy Lecithin
  • Chocolate
  • Artificial Flavor

High fructose corn syrup can link to major health risks; that’s why it’s often discouraged in high amounts. The last ingredient is simply listed as “artificial flavor,” meaning that some of the flavor comes from a chemical compound rather than its actual ingredients!

3. Our sunflower seed cookies contain less sugar and sodium than the leading sandwich cookie brand.

Let’s look at the nutrition facts. We compared a six-pack of sandwich cookies to a 1 oz. pack of Grace’s Best Cookies that contains 5 cookies. Prepackaged, both are convenient for snacking with a controlled serving. Here’s what we found:

Grace’s Best Sandwich Cookie
Calories 130 270
Total Fat 6g 11g
Saturated Fat 2.5g 3g
Sugars 8g 23g
Sodium 55mg 220mg

Next time you’re craving a sweet, crunchy snack, look at the label and then decide. We encourage everyone to pay careful attention to what goes into their bodies! Remember, even our sunflower seed cookies are still cookies, so snack wisely!

Sunflower Seed Pancakes

Pump up your breakfast routine with an alternative recipe for sunflower seed pancakes!

Some mornings, having enough time to sit down and enjoy a delicious, hearty breakfast seems like a distant dream. In our fast-food, eat-on-the-go culture, we find ourselves driving to work eating dry cereal in our laps or with stomachs rumbling from having skipped breakfast entirely.

But the only thing that’s worse than not enough time to eat is having plenty of time, but not enough ingredients. In your standard, old-fashioned pancake recipe, you need these essentials: milk, flour, baking powder, salt, sugar, eggs, butter, and toppings like syrup or brown sugar. It may not seem like it takes much. But when you can’t make pancakes for your littles like you promised because you’re out of flour and sugar, their disappointment basically lingers until lunch.

Just-add-water pancake mixes are great as a convenient option, but it’s not as much fun as baking from scratch! And we would know, we bake cookies for a living.

Our recipe for sunflower seed pancakes only requires four ingredients: eggs, bananas, butter, and Grace’s Best Cookies!

Let’s get started:

  • For one pancake, whisk 1 egg into a bowl.
  • Next, take 1/2 of a ripe banana and mash it with a fork into the same bowl. Mix it together until all the bumps are smooth.
  • Crush up 2-3 Grace’s Best Cookies and mix them into the batter.
  • Then, heat a lightly buttered griddle or frying pan over medium high heat and pour in your egg-banana-sunflower-seed batter.
  • Allow each side of the sunflower seed pancakes to sit for 45-60 seconds before flipping.

  • Lastly, crumble an additional 2-3 Grace’s Best Cookies on top of your sunflower seed pancakes for that extra crunch!
  • And if you’re feeling sweet, drizzle on a little bit of syrup or honey!

Grace's Best Cookies sunflower seed pancakes recipe  We promise you’ll be comfortably full after only one or two sunflower seed pancakes. The eggs and bananas pack in the protein and potassium which are sure to keep you feeling full for longer. And you can find Grace’s Best Cookies in select retailers like Whole Foods, Dierbergs Markets, Natural Grocers, or Green Acres Markets, or on our website!

A Family Tradition in the Making

Grace’s Best Cookies was built on the foundation of a family tradition.

But what’s so traditional about a cookie made out of sunflower seeds and rolled oats?

At first glance, there’s nothing traditional about our cookies. Where are the chocolate chips? What about the cream-filled center?

Behind these delicious, crunchy cookies is the story of how an authentic, non-traditional recipe stood the test of time and anchored a family in a new tradition.

It all starts with a woman named Margaret. Back in 1992, Margaret, who just happens to be Grace’s grandmother, started her own cookie company just outside of Kansas City, Missouri. She hoped to pass her sunflower-seeds-and-rolled-oats recipe down to the next generations in her family. These cookies in particular were her bestseller, her secret weapon, her masterpiece.

Margaret saw how her most loyal fans connected with the naturally delicious ingredients she incorporated into her recipe. And these tasty treats may be small, but they have big flavor.

Person holding Grace's Best Cookies

She refused to pass up the opportunity to make a tradition out of such a unique, non-traditional recipe. But she still needed someone who would carry out her legacy after she retired and have the same passion for her company.

She had one candidate in mind who fit that description perfectly. And it was none other than her son, Jeff. Fast-forward ten years to when Grace’s Best Cookies officially began as a family-owned and operated company.

In 2002, Jeff agreed to take the reins after Margaret retired and he named the company after his own daughter, Grace.

And since Jeff took over the company, over 99 million cookies have been sold in-store and online! Hundreds of grocers saw the potential of stocking their shelves with these sweet snacks. Select Whole Foods Markets, Natural Grocers, GreenAcres Markets, Hy-Vee, and countless other locations nationwide sell Grace’s Best Cookies.

Margaret’s vision of a family-owned tradition came to life. Together, both Jeff and Grace continue out her mission to make cookies for the next generation of dedicated snackers.
