Here’s how to make muffins using our very own Grace’s Best Cookies.

With that extra special sweet crunch from the sunflower seeds, rolled oats and brown sugar, they’re a perfect substitute for granola:

The Ingredients

  • 2 cups of crushed Grace’s Best Cookies
  • 1 egg
  • 1/2 cup milk (or almond milk alternative)
  • 1/2 cup vegetable oil
  • 1 cup flour
  • 3 tbsp sugar
  • 3 tsp baking powder
  • 1 tsp salt

The Directions

  1. Heat oven to 400 degrees
  2. Grease bottoms only of about 12 medium-sized muffin cups (or use paper cups)
  3. Beat egg; stir in milk and oil
  4. Stir in remaining dry ingredients all at once just until flour is moistened (batter might appear lumpy)
  5. Fill muffin cups 3/4 full
  6. Bake 18-20 minutes or until they’re golden brown
  7. Remove from the pan right away
  8. Wait til they’re cooled off and enjoy for breakfast or an after-dinner sweet treat!

Recently, our talented team in the test kitchen tried their hand at making a brand new recipe: crusted salmon with sunflower seed cookies. This time, they whipped up a similarly satisfying dish for you to indulge on: cookie-coated chicken breast!

Traditionally, cookie-coated chicken breast doesn’t end up on your dinner plate. Yet while cookies as a breading for chicken seems unusual, it’s a naturally delicious new option! Tag @GracesBestCookies on Facebook and share your recipe results with us!

The Ingredients

Before you get started, let’s make sure you’re prepped with the proper ingredients!

For the chicken:

For the honey mustard:

  • 1/4 cup honey
  • 1/4 cup Dijon mustard
  • 1 tbsp distilled white vinegar
  • 1/4 cup mayo
  • 1 tsp cayenne pepper

The Steps

  1. To start, preheat oven to 200C/390F
  2. Second, spread ground cookies on a baking tray, spray with oil (spray vertically to avoid blowing off the tray), then bake for 3 to 5 minutes until light golden. Transfer to your bowl.
  3. Third, place a rack on a baking tray (not required but this helps bake it more evenly).
  4. Then, put the egg, mayo, Dijon, flour, salt and pepper in a bowl and whisk with a fork until combined.
  5. Add the chicken into the Batter and toss to coat.
  6. Next, pick up chicken with tongs and place it into the cookie bowl.
  7. Sprinkle surface with cookie crumbs, then press down to adhere. Transfer onto baking tray. Repeat with remaining chicken.
  8. After that, spray lightly with oil, sprinkle with a touch of salt (optional). Bake 18 minutes or up to 20 minutes if gigantic. Any longer will dry out chicken.
  9. Finally, while chicken is baking, combine honey mustard ingredients and whisk until blended.
  10. Remove chicken from oven and serve immediately, with honey mustard and sprinkle with fresh parsley, if desired.

Crusted Salmon with Sunflower Seed Cookies

Crusted salmon typically isn’t topped with sunflower seeds and rolled oats cookies. But just like our non-traditional cookie recipe, we’re always looking for creative, non-traditional ways to incorporate our cookies into new and unexpected recipes. Normally, we use Grace’s Best Cookies in decadent dessert creations, but the sweet and savory combination in this entree is nothing short of mouthwatering.

Directions

Here’s the step-by-step process:

  1. First, preheat oven to 375F
  2. Second, crush the cookies in a small bowl along with the parmesan cheese and set aside.

  3. Third, rinse and dry the salmon filet then lightly season with salt and pepper.

  4. Next, pour 2 tbsp of olive oil in a pan at medium heat.
  5. Once the pan is hot put the salmon in skin side down.
  6. While the salmon is cooking, mix the dill and remaining tbsp of olive oil with the cookie parmesan mixture.
  7. Once the salmon has cooked for 4-5 minutes, pile the cookie mixture on the salmon, squeeze half of the lemon on the salmon and top with the slice of lemon.

  8. Put the pan in the oven for 14 minutes or until the cookie mixture begins to brown.
  9. Finally, remove your crusted salmon from the oven and serve immediately.

Sunflower Seed Pancakes

Pump up your breakfast routine with an alternative recipe for sunflower seed pancakes!

Some mornings, having enough time to sit down and enjoy a delicious, hearty breakfast seems like a distant dream. In our fast-food, eat-on-the-go culture, we find ourselves driving to work eating dry cereal in our laps or with stomachs rumbling from having skipped breakfast entirely.

But the only thing that’s worse than not enough time to eat is having plenty of time, but not enough ingredients. In your standard, old-fashioned pancake recipe, you need these essentials: milk, flour, baking powder, salt, sugar, eggs, butter, and toppings like syrup or brown sugar. It may not seem like it takes much. But when you can’t make pancakes for your littles like you promised because you’re out of flour and sugar, their disappointment basically lingers until lunch.

Just-add-water pancake mixes are great as a convenient option, but it’s not as much fun as baking from scratch! And we would know, we bake cookies for a living.

Our recipe for sunflower seed pancakes only requires four ingredients: eggs, bananas, butter, and Grace’s Best Cookies!

Let’s get started:

  • For one pancake, whisk 1 egg into a bowl.
  • Next, take 1/2 of a ripe banana and mash it with a fork into the same bowl. Mix it together until all the bumps are smooth.
  • Crush up 2-3 Grace’s Best Cookies and mix them into the batter.
  • Then, heat a lightly buttered griddle or frying pan over medium high heat and pour in your egg-banana-sunflower-seed batter.
  • Allow each side of the sunflower seed pancakes to sit for 45-60 seconds before flipping.

  • Lastly, crumble an additional 2-3 Grace’s Best Cookies on top of your sunflower seed pancakes for that extra crunch!
  • And if you’re feeling sweet, drizzle on a little bit of syrup or honey!

1 ½ cup flour

1 Tbs sugar

1 Tbs baking powder

1/4 tsp salt

1 Tbs sugar

1 tsp vanilla

2 eggs

1 cup milk

4 Tbs melted butter

First, mix together the dry ingredients, then the wet ingredients. After that, pour ¼ cup of batter over medium high heat and cook until each side is brown. Add strawberries, maple syrup, and however many crushed Grace’s Best Cookies as you want on top (the more cookies, the better!). People will think you’re running your own breakfast restaurant right out of your kitchen!
